Cravings Review – Roasted Jalapeno and Chorizo Queso

Y’all. This might be one of the most unexpected yet truly AMAZING dips I’ve ever made! Without doubt one of the spiciest quesos we’ve ever made, but well worth it. My husband is all about spicy foods and a good dip. This was just what the doctor ordered and it has everything you need for a great dinner or party. This recipe called for six whole jalapenos. Now I know that the amount of jalapenos can be a deterrent for those who don’t enjoy spicy foods. And I won’t lie, it’s spicy and a little intense. But once you get through a few bites, you start working through the spice and enjoying the flavor. So be willing to try something new and give this queso a shot!

I don’t use chorizo regularly so I wasn’t entirely sure how this would taste going in. But any kind of meat is acceptable to my hubby so we went in full force! The longest cooking time in this recipe is the roasted jalapenos. You want to get them nice and dark so depending on your oven this could take a while. We cook in a tiny oven in our camper that only goes to 450 degrees. So it took double the amount of time to cook these. The rest of the dip went by quickly: an onion, tomato, velveeta cheese and chorizo. Simple ingredients but one heck of a taste! The best part is there is no bad aftertaste, which is a huge deal when working with new recipes!

  • Recommendation: This was my and my husbands favorite recipe thus far! It makes plenty of dip to go around and is very hearty so be prepared to fill up quickly!

Your Worth Cannot Be Taken From You

Jealousy is one of the easiest temptations to fall into, it can demolish your self-worth quicker than you would believe. It comes out of nowhere and hits you like a ton of bricks. Sometimes it hits you in areas that you thought you were strong in. Jealousy rattles your brain, making you question, making you wonder, making you doubt your worth. Our world is constantly pressuring us with the ways they want to define us. We are defined by our looks, by our fitness levels, by our job, by our philanthropy, by our political views, by the home we live in, and honestly the list could go on for days. Jealousy is the byproduct of this pressure to be defined. We feel this need to live up to the standards set for us and that if we are not reaching our highest potential then we have failed.

Know this: you are more than what this world says you are. Your worth is not determined by this world. Your worth is something that cannot be taken from you. Your worth comes from within, your worth is God-given, your worth is undeniable. You are worthy of goodness, of happiness, of a beautiful and wonderful life.

Every single person on this Earth was created with a purpose. Each day that you are alive, each breath that you take is for a reason. You are here to bring goodness to the world, to help those around you, to make this world a little better than it was before. Take a moment to remember that you are right where you need to be. You are in this state, in this city, in this job for a reason. Be thankful for where you are now, grow in that moment, and do not let your self-worth be defined by this world.  

When pangs of jealousy hit, remember that your worth cannot be taken from you. That jealousy is a symptom of a broken world, it is a byproduct of sin. Jealousy is inevitable, but you can fight it by remembering who you are. You are perfectly and wonderfully made. You were made in the image of a perfect Creator. You were made to do more than you ever dreamed possible.

As you go through your week, keep these things in mind.

You are worthy of love, trust and respect.

You are worthy of a good and happy life.

You are worthy of a job that you love.

You are worthy of a partner who loves and adores you.

You are worthy of the life you’ve always dreamed of.

You are worthy. Repeat that over and over until you believe it.

You were made in the image of a perfect, gracious God. He did not create you by accident. He loves and adores you and is your biggest advocate that you are worthy of so much more than you believe. Take heart that He loves and adores you just the way you are.

Passion For Travel

I have always had a deep passion for travel.

There are few things in life that truly make you feel alive, and for me that is getting out and experiencing other cultures, historic structures and stunning views. But what if your passion seems unattainable? What if there is no feasible way to pursue the things you love in life?

When this happens, it causes me to sit down and think about why I have this passion, and what I can do with that passion.

If your like me and have a passion for traveling, but you can’t travel to all the places you’ve dreamed of going right now, take steps to still fulfill that travel ache within you. Your passions in life are there for a reason, and even if they do not seem feasible in the short term, there is a reason for them.

One thing I try to do is offer to go on business trips as often as possible. These trips aren’t always to places on my bucket list, but they give me the chance to get out of my everyday environment, explore new cities and see what they have to offer! We have a fun trip planned to New Mexico this summer for work; it’s not a place I had on my bucket list to see, but it is an opportunity to experience an entirely new state!

Another thing I like to do is start planning for future trips! I have a blast spending time researching the perfect places to stay, the best local cuisine in the area, and the exciting excursions to take while you are there. I’ve been working on a post about Oahu and I’ve spent hours finding the cutest little beach homes to rent. Most of these houses are away from large hotel chains and secluded in an area where you could enjoy the serenity of Hawaii. I absolutely loved envisioning what it would be like to stay there; feeling the ocean tickle your toes, smell the refreshing ocean breeze, and look out at the expansive ocean all around you.

It may not be sitting in the perfect vacation spot, but taking time to plan these trips and envision what could be is a great way to help satisfy your travel bug(at least for a while)!

Lastly, I love to explore the state I am in. There are so many unique areas in every state. So get in your car and drive to a place you’ve never been before. This year my husband and I are hoping to visit Tombstone and Horseshoe Bend. Both areas have their own unique charm, host stunning views, and are within a 2-4 hour drive of our home. Being able to take time to experience the areas all around us is such a blessing and something everyone should utilize.

Don’t let lack of accessibility to your bucket list stop you from exploring new places and enjoying your passion for travel!
